Peanut Butter Soup

Ingredients

  • 900g chicken
  • 1 large onion, diced
  • 1 tablespoon salt, or to taste
  • 1 teaspoon seasoned salt
  • 3 habanero peppers (adjust based on your heat tolerance)
  • 115g garlic, minced
  • 115g ginger, minced
  • 2.5 litres water (adjust for desired thickness; note that it thickens overnight)
  • 4 fresh tomatoes
  • 480ml (2 cups) peanut butter

Method

Steaming the Meat

Prepare the Meat:

Place the chicken in a large saucepan over medium heat.

Add 500ml of water, salt, half of the diced onion, and the seasoned salt.

Cover and let it simmer for about 10 minutes.

Blending Ingredients

Make the Tomato Blend:

In a blender, combine the remaining half of the onion, tomatoes, garlic, ginger, and 500ml (2 cups) of water.

Blend until the mixture is smooth.

Making the Peanut Butter Soup

Combine and Cook:

Pour the tomato blend into the saucepan with the simmering meat and spices.

Let it boil for another 10 minutes.

In the same blender or food processor, blend the peanut butter with 750ml to 1 litre (3-4 cups) of water until smooth.

Final Cooking:

Pour the peanut butter mixture over the meat and tomato mixture in the saucepan.

Let the soup boil for an additional 30 to 45 minutes, stirring occasionally.

Serve:

Enjoy your world-famous peanut butter soup hot, with your choice of sides.
