Ingredients

  • 6 eggs
  • 150g cheese
  • 250g cherry tomatoes
  • Tin of potatoes

Method

1. Drain the potatoes and cut into slices.

2. Whisk the eggs.

3. Slice the tomatoes in half.

4. Add them all to a large frying pan and swirl to the edges.

5. Cook gently until set on the bottom.

6. Top with the cheese and pop under the grill until the cheese has melted and the top has set.
