Chicken Fried Rice

Ingredients

  • 300g rice
  • 200g cooked chicken
  • 200g frozen mixed veg
  • 2 eggs
  • 2 tbsp soy sauce




Methods

1. Add 130g rice and 600ml of cold water to a cold pan and bring to the boil.

2. Once boiling, put the lid on, turn off the heat and leave for 13 minutes or until all the water is absorbed.

3. Leave rice to cool.

4. Heat the oil in a large wok.

5. Add the rice and soy sauce. Cook over a high heat for 5 minutes.

6. Add the chicken, veg and soy sauce and cook for 5 minutes stirring all the time.

7. Push the rice to the side and add the egg. Cook until starting to scramble then quickly stir through the rice.

8. Add some more soy sauce and stir through.
