1. In a bowl add the chicken, yoghurt and curry powder, leave to marinade for 1 hour.
1. In a pan sauté the onion with a little oil and add the garlic and ginger and cook for 2 minutes more.
1. Add the tomatoes, cook on medium for 5 minutes, then add chicken and cook for another 5 mins.
1. Add some water just to cover. Cover and cook for 30 mins.
1. Add frozen veg, coconut milk or cream and cook for another 5 mins (don't boil or it'll split).
1. Stir in the spinach until it has wilted.
