Spicy Ham and Tomato Pasta

Ingredients

  • 100g cooked gammon
  • 1/2 tbsp oil
  • 1 tbsp chilli powder 
  • 200g penne pasta 
  • 100g frozen mixed veg
  • 1 tin chopped tomatoes 
  • ½ tin of beans
  • 100ml vegetable stock 
  • 100g spinach




Methods

1. Chop the gammon into small pieces. Add the oil to a large pot over a medium heat, then add the gammon and cook for 3–4 minutes.

2. Add the chilli powder and cook for 1 minute more.

3. Add the uncooked pasta, mixed vegetables, tomatoes, and veg stock to the pot.

4. Put a lid on the pot, turn up the heat to medium-high and bring the stock to the boil.

5. Once the stock comes to a full boil, give the pasta a quick stir, add the spinach, replace the lid, and turn the heat down to medium-low.

6. Let the pasta simmer for about 8 minutes, or until it is tender and most of the stock has been absorbed.

7. Serve.
