With the Spring Bank Holiday quickly approaching, I know a lot of you will be using this long weekend to fit in a quick holiday with the family. That is what inspired this week's meal plan - quick meals that only require one pot! These recipes will be great for camping or even days away in a camper van.
They may only require one pot but, trust me, these dishes are packed with flavour and are super easy to make!
With warming dishes like my Chorizo and Sausage Hash and Jambalaya to my scrumptious Salmon Risotto, there is something for everyone in the family! They also minimise the washing up, perfect for over the Bank Holiday (because no one enjoys washing up, right?).
These recipes can easily be made vegetarian or vegan; simply substitute any meat or dairy with your favourite alternative!
