Chicken Salad

Ingredients

  • 120g salad leaves, washed and torn
  • 250g cherry tomatoes, washed and halved
  • 1 tbsp sesame oil
  • 1 tbsp veg oil
  • 200g cooked chicken, chopped
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • Salt and pepper, to taste



Methods

1. Divide the salad leaves and tomatoes evenly between four plates.

2. Heat the two oils together in a large frying pan.

3. When the oils are really hot, place the chicken in the pan, add the soy sauce, lower the heat and stir to coat all the chicken pieces in the soy sauce.

4. After 5 minutes, add the honey and stir to coat all the chicken pieces.

5. Simmer the chicken for a couple of minutes.

6. Lift the pieces out one-by-one with tongs and share them out onto the four beds of salad.

7. Stir the leftover sauce in the pan and drizzle carefully over each salad.

8. Season to taste and serve immediately.
