Tomato and Basil Pasta

Ingredients

  • 1 tsp oil
  • 1 onion, chopped 
  • 4 cloves garlic, finely chopped
  • 1 tin tomatoes
  • 30g fresh basil leaves,  torn
  • 300g spaghetti
  • 240g fresh mozzarella cheese, cut into 1/2-inch cubes





Methods

1. In a large frying pan, heat oil over medium heat. 

2. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is crisp-tender. 

3. Stir in tomatoes and bring to boil. 

4. Reduce heat; simmer uncovered 20 to 25 minutes, stirring occasionally, until thickened. Stir in basil.

5. Meanwhile, cook and drain pasta as directed on pack and drain.

6. Stir pasta into sauce and cook until thoroughly heated. 

7. Into a large serving bowl, pour pasta and sauce. Gently stir in the cheese.
