1. Fry the onions, garlic and grated ginger in the oil.
2. When softened add the cumin, turmeric, pepper, courgette, tomatoes, curry powder, vegetable stock, chickpeas, and red lentils.
3. Stir well then put the lid on let it cook for 30 mins.
4. Add the coriander and lemon juice and stir again.
5. Serve.
