1. Put the veg into one pot and cover with cold water. Bring to the boil and simmer for 5 minutes until soft.
2. Melt the butter in another pot.
3. Stir in the flour and cook off for 3 minutes.
4. Gradually whisk in the milk.
5. Bring to the boil then reduce the heat. Simmer until the sauce is thick and glossy.
6. Remove from the heat and stir in 100g of cheese.
7. Put the veg in a casserole dish and cover with the sauce.
8. Use the remaining cheese to top the dish.
9. Cook in the oven at 200°C for 10 minutes.
