Omelette and Sweet Potato Fries

Ingredients

Omelette

  •  2 eggs
  • 50g cheese
  • 1 onion
  • 1 rasher of bacon
  • 30g spinach

Sweet Potato Fries

  • 1 sweet potato
  • ½ tbsp oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper




Methods

Omelette

1. Whisk the eggs.


2. Slice the onion and bacon.

3. Add the bacon and onion to a frying pan and lightly fry.

4. Add the egg and. spinach and stir for a few minutes.


5. Swirl around the pan.

6. Cook gently until set on the bottom. 

7. Top with the cheese and pop under the grill until the cheese has melted and the top has set.

Sweet Potato Fries

1. Peel then cut the sweet potato horizontally as thick or thin as

you’d like your sweet potato fries to be.

2. In a bowl, mix the oil and salt until everything is well combined.

3. Toss in the cut sweet potato and mix around using your hands or a spoon until all of the sweet potato fries are well coated.

4. Air fry at 180°c for 10 minutes, shake, and increase the heat to max (mine is 240°c) for a further 4 minutes.
