• 2 courgettes, chopped
  • 1 aubergine, chopped
  • 2 red onions, chopped
  • 2 peppers, chopped
  • 4 tomatoes, chopped
  • 1 tbsp tomato puree
  • Cooking oil
  • Salt and pepper
  • 4 Crushed garlic cloves
  • 2 tbsp fresh basil, chopped


1. Heat the oil in a pan and add the onions. Soften for a few minutes.

2. Add the garlic and stir. When it starts to release its aroma, add all the other vegetables except the tomatoes.

3. Sit on a low heat. After 10 minutes, add the tomatoes.

4. Stir through and cook for another 10 minutes. Now add in the tomato puree and salt and pepper.

5. Mix well and allow it to cook out for at least 5 minutes.

6. Stir through the herbs and serve.
