To serve:
1. Preheat the oven to 180°C.
2. Grease an oven-proof dish with a little oil using a paper towel.
3. Crack the eggs into a bowl and mix with a fork. Optionally, add the milk or milk alternative.
4. Grate the cheese and carrot (if using) and add to the egg mixture.
5. Top, tail, and finely slice the spring onion.
6. De-seed and dice the pepper (if using).
7. Add mixed veg, chopped pepper, and spring onions to the egg mixture. Season with pepper.
8. Pour the mixture into the greased oven-proof dish.
9. Bake in the oven for 35-40 minutes.
10. Check if it’s cooked by inserting a knife into the centre; it should come out clean.
11. Enjoy hot or cold.
