One-Pot Spicy Bacon and Tomato Pasta

Ingredients

  • 250g cooking bacon
  • 1 tbsp oil
  • 2 tbsp chilli powder
  • 400g penne pasta
  • 200g frozen mixed veg
  • 2 tins chopped tomatoes
  • 250ml vegetable stock
  • 200g spinach





Methods

1. Chop the bacon into lardons. Add the oil to a large pot over a medium heat, then add the bacon and cook for 3–4 minutes.

2. Add the chilli powder and cook for 1 minute more.

3. Add the uncooked pasta, mixed veg, tomatoes and veg stock to the pot.

4. Put a lid on the pot, turn up the heat to medium-high and bring the stock to the boil.

5. Once the stock comes to a full boil, give the pasta a quick stir, add the spinach, replace the lid and turn the heat down to medium-low.

6. Let the pasta simmer for about 8 minutes, or until it is tender and most of the stock has been absorbed. Serve.
