Savoury Bread and Butter Pudding



  • 200g soft cheese
  • 8 slices of brown bread
  • 2 onions, sliced
  • 250g mushrooms, sliced
  • 200g baby spinach
  • 200g grated cheese
  • 2 tbsp mixed herbs
  • 2 tbsp chilli flakes
  • 2 eggs
  • 200ml milk


1. Spread the bread with the soft cheese and cut up.

2. Lay half on the bottom of an oven dish.

3. Top with half the onions, mushrooms, spinach and grated cheese.

4. Sprinkle over half the mixed herbs and chilli flakes then cover with another layer of bread.

5. Add the remaining onions, spinach, mushrooms, mixed herbs, and chilli flakes.

6. Beat the eggs and add the milk. Pour over the top.

7. Finish with the remaining cheese and bake for half hour at gas mark 6 or 200c.
