Slow Cooker Beef Goulash

Ingredients

  • 400g diced beef
  • 1 tbsp flour
  • 2 carrots, diced
  • 2 parsnips, diced
  • Small swede, diced
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 1 tin chopped tomatoes
  • 100ml beef stock
  • 4 tbsp tomato puree
  • 2 tbsp paprika

Method

1. Prepare the Meat

Sprinkle the flour over the meat evenly. If you prefer you can then brown the meat in a frying pan to seal it. This does help retain the flavour but is not an essential step.

2. Prepare the Slow Cooker

Place the diced beef and vegetables into the slow cooker.

3. Mix the Sauce

In a jug, combine the beef stock, tomato puree and paprika. Stir well.

4. Combine

Pour the stock mixture over the beef and vegetables in the slow cooker. Add the tin of chopped tomatoes and stir everything together to ensure it's well combined.

5. Cook

Set the slow cooker to high and cook for 5 hours. Alternatively, you can cook it in the oven at 140°C for 1.5 hours. Or a similar time on the hob.

Serve with rice.
