Ingredients

  • 300g chicken breasts, diced
  • 2 leeks, sliced
  • 300ml chicken stock
  • 2 tbsp fat free yoghurt
  • 2 tsp mustard
  • 260g rice





Methods

1. Set your rice on to cook as per the packet instructions.

2. Put your chicken and leeks into a pot with the stock, yoghurt, and mustard.

3. Bring to the boil and then reduce heat to a simmer and cook for 20 minutes.

4. Serve over the cooked rice.
