Ingredients

  • 4 eggs
  • 100ml cream
  • 100g mature cheddar cheese
  • 1 onion, diced
  • 50g spinach
  • 1 pinch salt and pepper

Methods

1. Chop your onion, grate your cheese, break your eggs into a bowl and mix in the cream with a fork or whisk. Add the spinach and stir through.

2. Heat the pan on a medium heat and fry off the onion for 2 minutes.

3. Pour the egg mix in.

4. Lower the heat when you see the eggs change colour at the edge as they firm up (2-3 mins).

5. Add the cheese and season with salt and pepper.

6. Run a flat turner or spatula round the outer edge of the omelette.

It should come away cleanly - this lets you know the underside is cooked.

7. Pop under the grill for a further 1-2 mins until the top is set.


8. Serve with salad.
