Lemon and Herb marinade
1. Mix all marinade ingredients in a bowl, adding more salt, pepper or chilli flakes to suit your spice preference.
2. Dry the chicken thighs with a kitchen towel.
3. Slash the chicken skin and add to the bowl to marinade for a couple of hours.
4. Chop the sweet potatoes into chip shapes and drizzle with oil, salt, pepper, and paprika.
5. Heat oven to 190c.
6. Put the chicken on a baking tray and bake for 20-25 minutes, brushing with more marinade a couple of times.
7. Add the chips into the oven alongside the chicken for 20-25 minutes until cooked or cook in the air fryer.
8. Chop the chicken into strips and add to the wrap along with lettuce and mayonnaise.
