Sausage Shakshuka

Ingredients

  •  4 eggs
  •  8 sausages, sliced
  •  500ml passata
  •  2 tins baked beans
  •  1 onion, chopped
  •  2 peppers, sliced
  •  4 tomatoes, chopped
  •  4 cloves garlic, minced
  •  100g spinach, chopped
  •  2 tsp chilli flakes
  •  2 tsp mixed herbs
  •  1 tsp paprika
  •  1 tsp oil


To season:

  •  1 pinch salt and pepper







Methods

1. Heat the oil in a pan and add the onion, pepper, sausage and garlic and fry till soft (around 5 minutes).

2. Add the beans, passata, chilli, paprika, and herbs. Cook for 10 mins.

3. Add the spinach and stir through.

4. Simmer for 2-3 mins

5. Make a well in the middle with the back of a spoon and crack the egg into it.

6. Place a lid on top and cook for 6-7 mins until the egg white is just about set.

7. Season with salt and pepper.

8. Finish off under the grill for 2-3 mins.
