Winter Squash Gratin

Ingredients

  • 700g winter squash, cut into large chunks
  • 2 tbsp oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 tbsp finely chopped parsley
  • 1 tsp sage
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 eggs
  • 120ml milk
  • 150g Grana Pedano cheese, grated

Method

1. Roast the Squash

Preheat your oven to 220C/Fan 200C/Gas 7. Brush the squash chunks with 1 tablespoon of oil and place them on a baking tray. Roast for 30 minutes, or until tender. Once cooked, remove the flesh from the skin and mash it with a fork.

2. Prepare the Onion & Garlic

Lower the oven temperature to 180C/Fan 160C/Gas 4.

Heat the remaining oil in a frying pan over medium heat.

Sauté the diced onion for 5 minutes until soft, then add the minced garlic and cook for another 30 seconds.

Stir in the parsley, sage, and mashed squash.

Season with salt and pepper, then remove from heat.

3. Mix the Eggs & Cheese

In a large bowl, beat the eggs and milk together.

Stir in the squash mixture and cheese until everything is combined.

4. Assemble & Bake

Transfer the mixture into a greased pie dish. Bake for 30 minutes, or until lightly browned and sizzling.
